These bites are not too sweet but a little bite of something moorish when you're feeling like something sweet without going overboard. You could also make them into balls - I find a slice quicker, easier, far less mess and probably more hygenic!
Ginger is great for digestion and I enjoy the combo with pistachio nuts.
Blitz 1 c almonds till fine in blender (leave a few chunky bits)
Place in a bowl, mix in 1/2 c cacao powder,
2 TB peanut butter, 2 TB coconut oil,
2 TB apple syrup or other sweeter.
1/4 c pistachios (Or more)
A generous 1/2 c sliced crystallized ginger.
Mix well together, spread into a lined slice container. Into fridge till solid the cut and Enjoy!
Important note - Remember to add a pinch of love to everything you make - it makes it taste all the better!
I've also made using tahini instead of peanut butter and maple syrup to replace apple. Other options would be rice or coconut syrups.
Walnuts would be good instead of pistachios, maybe cashews.
You may need a little water to bind, it will depend on what ingredients you use.
